[fairly mild cw: food]
Lately I've been experimenting with adding amaranth seeds to my diet (haven't worked out all the kinks yet, but it's definitely got promise). I heard rumours that amaranth was ridiculously easy to grow, so my mom and I sprinkled a pinch of the grocery amaranth in a cup of dirt, put a bit more dirt on top, and stuck it on the windowsill to see if it would sprout.
So far, it's living up to its reputation:

(FTR, I *could* eat them like this: the seedlings are edible too, as are the adult leaves.)
Mom's thinking she'll plant them out in the backyard once they've gotten a little bigger. The plants can reach a height of 1 - 3 metres depending on variety. We're curious to see how these ones turn out.
